Serves: 15 cups
Healthy and simple guacamole appetizer!
  • 2 ripe avocados, peeled and pitted
  • 1 Tbsp. lemon juice
  • ½ tsp. salt
  • ¼ cup cilantro leaves, chopped
  • 1 jalapeno, chopped (optional). I didn't use it in the kids' cups
  • 1 mini fillo shells package
  1. Cut the avocados into halves. Remove the seeds, and scoop out the pulp into a small bowl.
  2. Use a fork to mash the avocado.
  3. Stir in lemon juice, salt, cilantro and jalapeno (if using).
  4. Scoop the guacamole into each cup. Serve immediately.
